Walnut Crescents

Ingredients

  • 2 cups walnuts, chopped and toasted
  • 2 cups flour
  • ¾ tsp salt
  • 2 sticks butter, room temp
  • 1/3 cup sugar
  • 1 ½ tsp vanilla
  • 1 ½ cup powdered sugar

Directions

Preheat oven to 325. Mix 1 cup chopped walnuts with flour and salt in medium bowl. In a small food processor place remaining 1 cup of walnuts. Pulse until you have a coarse meal – 10 to 15 seconds. Stir into flour mixture and set aside. In a bowl of an electric mixer cream butter and sugar until light and creamy scraping down the sides of bowl at least once. Beat in vanilla. Add flour mixture slowly and beat until dough comes together. Working with one tablespoon at a time, shape dough into balls. Place on baking sheet lines with parchment. Bake 17 to 19 minutes or until lightly browned. Remove to rack to cool completely. Once cooled, roll cookies in powdered sugar and coat thoroughly.
