Black Eyed Pea Dip - A Must on NY's Day for Good Luck!

Ingredients

  • 2 can black eyed peas, drained and rinsed
  • 1 yellow bell pepper, finely diced
  • ½ cup roasted red bell pepper, chopped
  • ½ cup diced red onion (optional – we leave it out)
  • ½ cup parsley, chopped
  • ¼ cup olive oil
  • 2 garlic cloves, minced
  • 2 tbl white wine vinegar
  • 1tsp ground cumin
  • 2 tsp ground mustard
  • ¼ tsp salt

Directions

Mix all ingredients in a medium size bowl. Refrigerate for a couple hours. Serve with tortilla chips.
