Roast Chicken, Potatoes and Italian Sausage

Nebbiolo, 2012


  • 6 medium potatoes, peeled and quartered
  • 2 tsp dried basil
  • 1/3 cup olive oil
  • 1 lb hot Italian sausage, cut into 1 inch chunks
  • 6 or 8 bone-in chicken thighs
  • ½ tsp black pepper
  • 1tsp salt
  • 2 tsp paprika


In a large shallow baking dish arrange potatoes in the pan. Mix the seasonings together and sprinkle potatoes with 1/3 of the spice mix. Arrange chicken thighs and sausage pieces on top. Sprinkle with remaining seasoning. Pour olive oil on top. Cover with foil and bake at 425 for 30 minutes. Reduce oven to 375, uncover dish and continue baking for 45 minutes until chicken and sausages are brown.
