Wine Pairing

Sangiovese, 2010


  • 1 cup warm water (110 deg)
  • 2 ¼ tsp yeast
  • 1 tbl sugar
  • 3 tbl olive oil
  • 2 ½ cups all purpose flour
  • 1 tsp salt


In a medium size bowl, dissolve the sugar and yeast in the warm water. Let sit a few minutes to make sure the yeast starts working. Add olive oil, flour and salt. Stir until dough forms and gather together. On a lightly floured surface, knead the dough a few times so that it feels smooth. Place dough on floured board and cover with the bowl. Let rest 10 minutes. Stretch and pat dough into large round. I make mine as big as my pizza paddle. You can bake right away in a preheated 450 oven for 18 minutes. Or what I will do it par-bake it for 5 minutes. Then I top it with pizza toppings of my choice and bake another 10-12 minutes.
