Ricotta Cookies


  • ½ cup butter
  • ¼ cup ricotta cheese
  • 1 tsp vanilla
  • 1 cup sugar
  • 1 egg, beaten
  • 2 cups flour, sifted
  • ½ tsp baking soda
  • ½ tsp salt


Preheat oven to 350. Beat butter and ricotta until creamy. Add vanilla then sugar gradually until well blended. Add egg and slowly mix in dry ingredients until well blended. Drop by teaspoon onto a parchment lined baking sheet. Bake 10 minutes. Cool on wired rack. If desired, drizzle cooled cookies with powered sugar icing.
