John's Moms Spaghetti Sauce


  • 1lb Italian sausage (casings removed)
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 2 cups sliced mushrooms
  • 4 cloves garlic, minced
  • 2 14.5oz cans of whole tomatoes (cut up)
  • 1 6oz can tomato paste
  • 1 tbsp. Italian seasoning
  • 2 bay leaves
  • 1 tsp. crushed red pepper
  • 1 small can sliced black olives


Cook sausage, onion, pepper, mushrooms and garlic until meat is cooked and browned. Drain off fat. Add undrained tomatoes, tomato paste, seasonings, 1/2 tsp. salt and 1/2 tsp. pepper. Bring to a boil and then lower heat. Simmer for 30 to 45 minutes. The first half covered, the second uncovered. Stir occasionally. Remove bay leaves and add sliced olives. Enjoy over freshly cooked pasta of your choice.
