Basic Polenta


  • 4 cups waters
  • 1 cup cornmeal
  • 1 tsp salt
  • 2 tbsp. butter
  • 2 tbsp. grated parmesan


Bring water to a boil. Add salt. Turn down water to low and slowly add the cornmeal, whisking constantly. Stir until smooth and cook until thick and creamy, about 10 or 15 minutes. Add more water if it gets too thick. When ready to serve add butter and cheese and incorporate.
