Olive Oil and Marsala Cookie


  • 3 cups flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup sugar
  • 1 large egg
  • 1/2 cup olive oil
  • 1/2 cup Marsala wine


1. Preheat the oven 375 degrees.

2. In a mixing bowl, whisk together flour, baking powder and salt.

3. In another larger bowl, whisk together sugar and egg until combined. Stir in the olive oil and wine. Slowly add the flower mixture until well combined. Knead until dough is easy to handle and medium soft.

4. On a clean surface, use your hands and roll the dough into 1/2 inch think cigar-like rolls. Cute each cigar into 6 inch pieces and fold into a loop shape. Press dough with fingers to seal cigar together. Place on a parchment rimmed baking sheet.

5. Bake for 15 to 20 minutes or until lightly browned.
