Blue Cheese Shortbread with Fig Jam

Nebbiolo, 2012


  • 1 cup flour
  • 1/2 cup butter, room temperature
  • 4 oz blue cheese, crumbled
  • Ground black pepper
  • Fig preserves


1. Preheat oven to 350. Line a baking sheet with parchment.

2. Place flour, butter and blue cheese and a few grinds of pepper in the bowl of a food processor. Process until the dough just comes together and starts to form a ball.

3. Dump the dough onto a floured surface and knead a few times to pull the dough together. Roll out to 1/8 inch thick. Cut rounds out of the dough and transfer to baking sheet. Top each shortbread with a small dollop of fig preserve.

4. Bake 10 minutes or until preserve is bubbling and pastry is lightly golden brown.

5. Let cool on baking sheet for at least 10 minutes then move to a wire rack to cool.
