White Cheddar Crisp Cookies

Sangiovese, 2013


  • 1 stick butter, at room temperature
  • 1 ¼ cup grated white cheddar (such as Dubliner)
  • ½ tsp salt
  • ¼ tsp cayenne pepper
  • 1 cup all purpose flour
  • 1 cup crisp rice cereal


Preheat oven to 350. In a mixer beat butter, cheese, salt and cayenne. Gradually stir in flour until incorporated. Add rice cereal and mix to combine.

Form rounded tablespoons of dough into disks. Arrange on baking sheets about 2 inches apart.

Bake until golden brown around the edges about 15 to 20 minutes. Transfer to wire racks and cool completely.
