Carmelized Onion and Blue Cheese Tartlet

Wine Pairing

Nebbiolo, 2012


  • 2 tbl butter
  • 4 cups thinly sliced onion
  • 1 cup thinly sliced shallot
  • 1 tbl sugar
  • 4 garlic cloves, minced
  • ¼ cup dry white wine (AR Pinot Grigio)
  • ¼ cup chicken broth
  • 1 ½ tsp fresh thyme, minced
  • 1/3 cup blue cheese
  • 3 tbl chopped chives
  • Salt, to taste
  • Store bought tartlet shells or fillo shells


Heat butter in large non-stick skillet and add onions, shallots and sugar. Sauté until onion is soft and slightly browned, about 10 minutes. Add garlic and sauté one minute more. Stir in wine and broth. Cook until liquid evaporates. Remove from heat and add thyme and 2 tbl chives. When ready to serve. Fill cup with about 1 tablespoon onion mixture. Top with a bit of blue cheese and chive.
