Ginger Spice Cookies


  • 2 cups flour
  • 2 ½ tsp ground ginger
  • 2 tsp baking soda
  • 1tsp cinnamon
  • 1 tsp ground cloves
  • ¾ tsp salt
  • ¾ cup crystallized ginger (or candied ginger)
  • 1 cup packed brown sugar
  • ¾ cup butter, softened
  • 1 egg
  • ¼ cup molasses


Measure flour, ginger, soda, cinnamon, cloves and salt into a medium bowl. Mix in crystallized ginger and set aside. In the bowl of an electric mixer cream the butter and brown sugar until light and fluffy. Add the egg and molasses. Beat until blended. Add flour mixture and beat until blended. Chill dough at least one hour. Preheat oven to 350. Roll dough into 1 1/4 inch balls and roll in granulated sugar. Place on a parchment lined cookie and bake about 12 minutes or until cracked onto but still soft to the touch. Cool on sheets 2 minutes and remove to cooling racks. Store airtight. These also freeze great!
