  • 1lb. Italian sausage, spicy
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups sliced mushrooms
  • 3 garlic cloves, minced
  • 3 small cans tomato sauce
  • 3 cans water
  • Salt and pepper to taste


Remove sausage from casing and brown in large pan with a little olive oil. Breaking meat up as it cooks. Remove from pan. Add onion, pepper and garlic and sauté until soft. Add tomato sauce and water to pan. Bring to a boil and simmer for 45 minutes. Add the sausage back to the pan and cook for another 10 minutes. Add salt and pepper to taste. Serve over rigatoni.
